| The traditional cuisine of Garfagnana is simple and plain for ingredients and preparation, as is any cuisine of rural origin. Besides chestnuts, traditional staple food for the valley dwellers, pork, trout, dairy product and the “porcino” mushroom are a must for the mealtime. A favourite dish is still maize or chestnut flour polenta, served with stewed meat and vegetables. Local specialities are “castagnaccio” (soft chestnut cake), emmer “faro” soup and “necci”, chestnut pancakes baked in “testi” (metal plates that are placed on the embers) and served with fresh sheep’s milk “ricotta”. |
